Zucchini Muffins
These muffins are so delicious they will blow your mind. If you have any reservations about them having Zucchini, I would say ask anyone in my family, but they probably all have their mouths stuffed with muffins so they can't answer.
These are perfect for putting in lunch boxes, bringing as a gift, or for a quick breakfast snack.
Ingredients
1 cup white sugar
1 cup brown sugar
3 eggs
1 cup vegetable oil
3 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
2 cups grated zucchini
Instructions
Grease two muffin tins (or use liners, we avoid them to make it easy on the kids). Preheat oven to 325 degrees F.
Combine dry ingredients. Mix flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl.
Grate zucchini. Stir into the wet mixture until well incorporated
Add dry ingredients to the wet and beat well.
Pour batter into muffin tins filling to ¾ full. Bake for 18 to 20 minutes, or until tester inserted in the center comes out clean. Let cool & enjoy with a big pad of butter!
