Quick & Easy Granola Recipe

This granola is seriously the very best - it is crunchy and salty and sweet and can be customized to your liking with all sorts of fun additions. Get making!

Ingredients

  • 10 cups Old Fashion Oats (not quick oats)

  • 1 1/2 cup of real maple syrup (make sure you use the real stuff!) - pro tip, add an additional 2 TBS to get your granola to have more clusters!

  • 3/4 cup coconut oil  (Trader Joe's is the best and has a strong coconut flavor but any will do)

  • 2 teaspoon course salt - I use kosher salt and usually add a little extra ;) 

  • 2 teaspoons vanilla - again, don't skimp here and if you can, use pure vanilla, not imitation! 

  • 1 ½  cups almonds (if you use sliced ones don't fold them in till the last 30 minutes of baking time. If you use whole ones which is also great, cook them right from the start)

  • 1 ½ cups pepita’s (these aren’t a MUST - but a nice to add)

  • 1 ½ cup unsweetened shaved coconut flakes - again a nice to add, if you do add them - fold them in during the last 30 minutes of baking

Instructions

  1. Preheat oven to 275. Combine maple syrup, coconut oil (warmed to liquid), salt and vanilla in a bowl, mix until well combined. In a separate large bowl, mix together your dry ingredients (oats, almonds, and whatever other additions you choose to use). Pour maple syrup mixture over your dry ingredients and stir until all of the oats are coated evenly. 

  2. Bake at 275 for about two hours on the middle oven rack. If adding coconut flakes or sliced almonds, do so in the last 30 minutes and loosely fold in. 

  3. Remove from oven, let fully cool before storing - depending on the amount of clusters you would like, break the granola up into pieces and put in a jar or bag for storing. If stored well, it should keep for weeks!
