Holiday Treats
We made our VERY favorite holiday treats - they are super easy DIY recipes and so freaking delicious!
Holiday Chex Mix
Ingredients
12 oz Corn Chex
12 oz Rice Chex
11.7 oz Golden Grahams
1 cup shredded or chipped coconut
1 cup slivered almonds
1 1⁄2 cup butter
2 cups sugar
2 cups light karo syrup
Instructions
In a large bowl combine cereals
Place almonds and coconut in a baking dish and toast at 350 degrees for 10 minutes or until golden
In a large saucepan melt butter, then add sugar and karo. Bring to a boil and boil 4-7 minutes (chewier on the low end, crunchier on the high end)
While the syrup is boiling, spread out two long sheets of parchment (we spray with cooking spray)
Remove from heat and carefully pour into cereal, incorporating as quickly and safely as you can. Add nuts and coconut and continue folding in until evenly distributed
Pour out onto parchment and let it cool or you will burn your tongue and that is the worst!
Sweet & Spicy Pecans
Ingredients
6 Tbsp karo syrup
3 Tbsp sugar
1⁄2 tsp salt
1⁄2 tsp black pepper
1⁄2 tsp cayenne pepper
3 cups pecan halves
Instructions
Preheat your oven to 325 degrees
Line a baking sheet with parchment paper
In a small bowl combine corn syrup, sugar, salt, pepper and cayenne, pepper
Add pecans and stir to coat
Transfer to a baking sheet and bake for 5 minutes
Stir and bake an additional 10 minutes or more if you like them a bit crispier
Cool completely before storing them
Pretzel Turtles
Ingredients
50-70 mini pretzels
2 7.6 oz bags of unwrapped Rolo’s
50-70 pecan halves
Instructions
Heat oven to 300 degrees
Lay pretzels on a baking sheet and top each one with a Rolo
Bake for 4 minutes and remove from oven
While candy is still melty press a pecan into each one and push down slightly
Cool completely
Peppermint Hot Cocoa Mix
Ingredients
32 oz Nestles quick
22 oz Nestles coffee-mate non-dairy creamer (powdered)
20 oz Nestles Rich milk chocolate mix
14 oz crushed peppermint (candy canes work great)
Instructions
In a very large bowl, combine the first three ingredients
Crush peppermint with a hammer and gallon ziplock bag, or a food processor to desired consistency
Add peppermint to powdered mixture and gently stir (in order to not make a dust storm) till combined
Store in favorite container
How to serve
When you are ready to serve it use the following amounts:
8 oz warm milk of your choice
3 Tbsp mix
